Strawberry Cole Slaw

The best BBQ side!!! This Strawberry Cole Slaw is a twist to a classic summer dish. It gives you your veggies and fruit in one dish. It is a super simple and quick recipe that pairs so well with a BBQ dinner. It is great as a side salad or a topping for a burger or bbq sandwich. We have it every 4th of July and it is our go to side dish for cookouts!

Supplies

Strawberry slaw

- 16 oz of slaw mixture (16 oz bag of prepackaged cole slaw or homemade mixture of 12 oz. green cabbage, 4 oz. red cabbage and 1/2 cup grated carrots)

- 2 cups sliced strawberries

- 1/2 cup slivered almonds

- 1 tsp. Poppy seeds

Dressing

- 1/8 cup red wine vinegar

- 1/2 cup sugar

- 1/3 cup canola oil

- 2 Tbsp. soy sauce

Prepare Slaw Mixture

You will need one head of green cabbage, one head of red cabbage and a handful of mini carrots or 1 large carrot.

Slice the cabbage into quarters and then cut out the core from each slice. Thinly slice the quarters and chop into small pieces. Do this for both the red and green cabbage. Use the large side of a box grater to grate the carrots.

Mix:

- green cabbage 12oz. or 5 1/2 cups

- red cabbage 4 oz or 1 1/2 cups

- grated carrots 1 oz or 1/2 cup

You can use any ratio you want but it should come out to about 16 oz of slaw mixture.

If you want to make a quick and easy slaw just buy a 16 oz bag or prepackaged Cole slaw. I make a lot of dishes with cabbage so I like to buy the heads of cabbage and use the extra for other recipes.

Prepare Dressing

Mix together:

1/8 cup red wine vinegar

1/2 cup sugar

1/3 cup canola oil

2 Tbsp. Soy sauce


Combine and stir until sugar is dissolved. I like to store my dressing in a mason jar so I can shake it up and add it to the salad a couple minutes before I serve it. Store in the fridge until you are read to serve.

Prepare Toppings and Mix to Serve

Slice 2 cups of fresh strawberries and add them to the slaw mixture. Add 1/2 cup slivered almonds and 1 tsp poppy seeds. Mix altogether and store covered in the fridge until you are ready to serve.

When you are ready to serve, shake or stir the dressing. Toss slaw mixture and mix in the dressing. Enjoy!!!!
