Substitute Ingredient: Lime Over Lemon

Today I want to share my altered basic home made recipe for making mayonnaise. There are a lot of recipes here on instructables. So during the lock down in my country I wanted to make mayonnaise but I was lacking one major ingredient which was the lemon.

Truth be said we normally find fruits like that in big fruit markets or shoprite. But with the lockdown there was no way I was getting my lemon but that not withstanding I wasn’t gonna let the situation stop me

For my cullinary special just like the vegans will substitute corn flour and milk so did i .....

For this mayonnaise this is my recipe:

  • 2 eggs
  • ½ tsp of salt
  • 1 tsp of sugar
  • 1 lime in place of lemon(my latest secret ingredient)
  • A cup of groundnut oil

you would also me needing:

  • A blender
  • An old jar of mayonnaise or any other jar that is air tight for storage.

Wash your eggs and crack into the bender add the sugar salt and the lime juice and blend for about 5 to 10 seconds. Then add some groundnut oil alittle at a time and blend to your desired consistency.

Please note you can add vinegar which is optional since I don’t like to preserve.
