Soy Sauce+Maple Syrup Dressing Noodle Salad

Great summer salad/noodle.

Arugula, Grape tomatoes, Blueberries and Acorn Buckwheat noodles!!!


Creative dressing: maple syrup, olive oil and balsamic used with soy sauce, works together incredibly.

Healthy and fun recipe for hot days!!

What You Will Need

Salad greens (Dark greens)
Buckwheat noodles (I used acorn buckwheat but regular buckwheat works too)
Grape tomatoes
Blueberries



2Ts Olive Oil
1Ts Balsamic vinegar
1Ts Minced Garlic
2Ts Maple syrup (1Ts Sugar if you like it sweet)
1Ts Soy Sauce
2Ts Fruit Juice or Lemon Juice (I used Peach Calpico because that's all I had at home!!)

Noodles

Boil the water and cook noodles about 5-7minutes. (Recommend to follow instruction on the box or bag)
Cooking is similar with spaghetti but only difference is you have to wash noodles right after you cooked it. It makes noodles to be chewy and better texture.
Wash cooked noodles with cold water.
Put them on the strainer.

Make It Salad!

First, get the water out of the noodles as much as you can.

1.Use your hand to pick up noodles and try to make it little bigger than your feast size. Put it on the plate you like to use.

2. Pour dressings over the noodles

3. Put blueberries and grape tomatoes

4. Put Arugula on top, and you are done!!

Serve!

Serve it with white wine or Prosecco.
Perfect lunch for Hot summer day!!!
