Super Easy Key Lime Pie

Ok, ok, this isn't technically a key lime pie since there are no key limes in it, but it's a very easy way to make a lime pie if you're intimidated or short on time. Assembling the pie is very quick, but you do need to let it set for a few hours, so make sure you factor that time in before you start.

Ingredients

Here's what I used.

Pie:

  • 3/4 cup sugar
  • 2 boxes of lime jello mix
  • a can of evaporated milk
  • 1/3 cup lemon juice
  • 1 cup boiling water
  • pie crust (homemade or store-bought)

Whipped cream (you can buy it instead but it's super easy to make):

  • 1 cup whipped cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Prepare Pie Crust

Prepare your pie crust. For me, that meant pre-baking my pie crust for about 6 minutes. Make sure you puncture the crust with a fork so it doesn't puff up too much!

Lime Flavor

To make the lime part of the filling, dissolve the two packets of lime jello mix into the cup of boiling water, then dissolve the sugar into the mixture. Let it cool, then add the the lemon juice and stir it in. While you're waiting for it to cool, you can make the whipped cream in the next step!

Make the Topping

Add the cream, sugar, and vanilla extract to a bowl and whip it up! Set it aside for later.

Finish the Filling

After the lime part of the filling has cooled to room temperature, whip the evaporated milk until it's frothy, then slowly add in the lime mixture and continue to whip the mixture on high for 5 minutes. You want to get a lot of air in the filling to get it nice and fluffy.

Pour the filling into your cooled pie crust and refrigerate it for at least 3 hours, preferably overnight, until the filling has set.

Decorate and Serve!

Once the pie has time to set, you can add the whipped cream topping and serve it! You can either slather on the whipped cream, or load it into a piping bag with a fancy tip and make a pretty pattern! I like to make this pie look a little fancier and let some of the top show through since it's such a pretty green color, but feel free to decorate it however you like!
