Sweet Delicata Squash
Simple recipe for a sweet delicata squash. Very easy to make. We got a bunch in our CSA this year and had never tried them before. I made this for a Thanksgiving side.
Supplies
1-2 delicata squash
1/4-1/2 cup brown sugar
1/2-1 cup walnuts or pecans
1-2 tbs maple syrup
1 tbs olive oil
Cut Squash
Preheat oven to 400.
Wash the squash well and then split in half and scoop out the insides. Slice the squash in 1/2 inch slices and arrange in a single layer on a baking sheet.
You don't need to pre-soften this squash, it's not as tough as butternut and the skin is edible.
Sweeteners
Mix the brown sugar, olive oil, and maple syrup (and nuts if wanted) together in a bowl. Next you can either toss the squash slices into the bowl or drizzle the mixture over the squash.
Bake
Bake at 400 for 20-30 minutes. Serve immediately.
