I decided to make this monkey bread for my school assignment.
I wanted to show my culinary skills and have fun as I go along
I hope you enjoy this amazing recipe
Ingredients
Prep time: about 1 hour
total time: about 4 hours (includes rising time)
Dough:
1. one package (2 1/4 teaspoons) active dry yeast
2. 1/4 cups warm water
3. 1 1/4 cups warm milk (2% or higher)
4.1/3 cup unsalted butter (melted)
5. 1/4 cups granulated sugar
6. 2 large eggs
7. 1 teaspoon salt
8. 5 cups all-purpose flour
Coating:
1. 3/4 cup unsalted butter melted
2. 1/4 cup granulated sugar
3. 1 tablespoon ground cinnamon
4. 2/3 cup packed brown sugar
5. 1 teaspoon vanilla extract
Vanilla Glaze:
1. 1 cup confectioners sugar (powder sugar)
2. 3 tablespoons heavy cream (or milk but this will give a less creamy texture)
3. 1/2 teaspoon vanilla extract
Making the Dough
By hand (this recipe works in a bread maker as well):
If you are using a stand or hand mixer make sure to keep it on medium speed
Dissolve yeast into warm water
Mix all dry ingredients together in a large mixing bowl, set aside
Mix all wet ingredients. Mix wet and dry together until well mixed.
Knead for about 10 minutes (DO NOT OVER KNEED! This will result in a tough dough) you'll know its done when it is stretchy and bounces back
Let rest for 2 hours (or until is double in size)
Coating
You will need about 50 small dough balls.
Melt 1/2 cup butter in a bowl and set aside
Mix cinnamon and sugar
Take your dough balls and cover in butter then roll in the cinnamon and sugar (if needed you can use more butter or cinnamon and sugar)
Place in bundt pan.
Coating Continued
Take the 1/4 cup butter and whisk brown sugar and vanilla until combined
Pour this over the dough balls in the pan before baking.
Baking
Let rise 40 minutes while in the pan before baking.
Set a convection oven to 350F.
Bake for 30-35 minutes
If the top of the bread is turning brown to fast cover with foil and let cook the rest of the way.
Glaze
Once as the bread is out of the oven and has been cooled for 45 minutes add the glaze.
Mix all the glaze ingredients together (no perfect order)
Flip the bread out of the pan and pour on the glaze.
Finish:
Now that you have your glazed monkey bread you can pull it apart and enjoy!
Tips
These are a few tips that will help out.
Try adding in a hand full of some sort of nut for an extra kick
make sure to spray the pan (or butter and flour) more then you think you should if you don't do this then there's a good chance the bread is not coming out.
sprinkle a bit of cinnamon on top after it's out of the pan
this is a fun activity to try out with a little one to help out.
