Taquito Cake
Things You’ll Need
El Monterey Brand Taquitos
7-11 Monterey Jack Taquitos
Guacamole (Recipe on Everythingbutfish)
Hot Salsa
Mexican blend cheese
Re-fried Beans
Light Sour Cream
Light Cream Cheese
Cilantro
Spices (Cumin and Chili Powder)
Cake Assembly
First prepare guacamole as demonstrated in another section of the blog. Set aside. Then preheat oven to 350 F and bake taquitos for about 10 minutes. Place first layer of taquitos down into pan then add a layer of heated re-fried beans, cheese, and salsa.
Assembly Pt.2 and Baking
Put another layer of taquitos on top of that and cover with guacamole and more cheese. Add another layer of taquitos on top and bake until cheese is melted.
Icing
While cake is baking begin to make the icing. Mix together equal parts sour cream and cream cheese with cumin and chili powder. Mix it really well and set aside.
Invert
Removed cake from oven and set aside to cool for about 5 minutes. Then take a large serving platter and invert being careful not let it fall apart.
Ice It
Now carefully add on your icing mixture!
Garnish and Suggestions
Garnish with a 7-11 taquito and some cilantro! Serve it up!
Suggestions:
- Try using 7-11 taquitos as your layers, few are used and they bring so much added flavor.
- Do not over do it on the icing. Could overwhelm the entire cake.
- Try it using steak or beef flavors!
