Tea Party on a Stick: Scones Three Ways

There's nothing better than catching up with a few friends over tea and scones--but it's so hard to choose just one flavor of deliciously buttery treat to go with the tea! For our summer parties, we combined three tasty scone bites onto one stick--white chocolate strawberry, cookies and cream, and local honey--for a delectable tea party finger food.

Making three big batches of scones would be a lot of work and too many scones for our little group of tea-partiers. To cut down on time and waste, it's easier to make one batch of base dough, then split it into three equal parts. This is an easy, fun recipe that is delightful to serve and fun to eat.

You will need:

- Sticks

- 2 1/2 cups flour

- 1/2 cup sugar

- 2 tsp baking powder

- 3/4 tsp salt

- 6 Tbsp butter

- 2/3 cup milk

- 1 egg

- 6 strawberries

- white baking chocolate bar

- 6 oreos

- 2 Tbsp honey (local is best--we have backyard beehives and love to use our own honey)

- mint leaves for garnish

Make Base Scone Dough

To make three varieties of scone for the stick, we are going to make one base dough and split it into three parts.

Base Dough Recipe:

- 2 1/2 cups flour

- 1/2 cup sugar

- 2 tsp baking powder

- 3/4 tsp salt

- 6 Tbsp butter, grated

- 2/3 cup milk

- 1 egg

Line a baking sheet with parchment paper. Combine the flour, sugar, baking powder and whisk together.

Mix in the grated butter, rubbing the mixture together with your fingers. Break up the butter until the mixture creates fine crumbs.

In a separate bowl, whisk together the milk and the egg. Once combined, mix the wet into the dry and stir until the dough comes together.

Separate the dough into three equal balls.

Prepare the flavorful magic bits of food that will transform boring old scone dough into fantastical tea creations!


White Chocolate Strawberry Scone

Roughly chop up a few squares of white chocolate. Chop three strawberries. In a small bowl, place one ball of your dough. Press the dough to the sides of the bowl and place the chocolate and strawberries inside. Using your hands, gently fold in the berries and chocolate.

Cookies and Cream Scone

Break up six oreos. Fold the pieces into the second ball of dough.

Local Honey Scone

Add 2Tbs of honey to the third ball of dough and mix together until combined.

Pat the doughs into a rough circle about 1" high and place in the freezer to cool.

Bake the Scone Bites

Preheat the over to 400 degrees F. Once the oven is heated, break the dough into small, two or three bite pieces and place them on a lined baking sheet. Bake the scone bites for 20 minutes until browned. Let cool for five minutes, then transfer to a wire rack to cool completely.

SCONES, ASSEMBLE!

Slice up the remaining three strawberries for assembly.

Once the scones have cooled, get out your sticks! Stab on a white chocolate strawberry scone, then a square of white chocolate, then a slice of strawberry. Add on a cookies and cream scone, then three mint leaves to brighten things up, then the honey scone. Arrange on a plate with leftover strawberry slices and honeycomb. Serve with tea, jam, and laughs!
