Teddy's Favourite Pupcakes

As the mama of two gorgeous fur babies, I understand the urge to make them something special. If your puppers have a special birthday coming up, or even if you just want to treat them, this is the perfect recipe. Every ingredient is completely healthy and dog-friendly, while somehow managing to still be totally delicious... you can even try one yourself if you'd like!

Supplies

I've worked hard to make this recipe as simple and accessible as possible, so there are only a few things you'll need.

Materials

  • One large bowl
  • One large spoon
  • One grater for the carrot
  • One small plate and fork for the banana
  • Patty pans (or baking paper cut into small squares)
  • One standard size muffin tin
  • An oven
  • One wire cooling tray (or can use an oven rack instead)
  • One medium bowl
  • One piping bag with a medium sized nozzle for the icing (alternatives are a butter knife to spread it, or a ziplock sandwich bag with a hole cut into one bottom corner)

Ingredients

  • For the batter
  • 1 cup wholemeal flour
  • 1/3 cup oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 egg
  • 1 banana, mashed
  • 1 carrot, grated
  • 2 tbsp honey
  • 2 tbsp peanut butter

  • For the icing
  • 1/2 cup natural yoghurt
  • 1/2 cup peanut butter
  • A generous squeeze of honey

Preheat the Oven

Set the oven to 350 degrees fahrenheit or 180 degrees celsius, so that it will be hot by the time your cakes are ready to go in.

Prep the Muffin Tin

Add six patty pans to the tin, or alternately, push small squares of kitchen paper into each hole.

Combine the Wet Ingredients

Add the egg, banana, carrot, honey, and peanut butter into the large bowl, and stir with your spoon until combined.

Add the Dry Ingredients

Incorporate the flour, oats baking powder, and cinnamon into the mixture, and stir well until there are no streaks.

Portion the Batter

Divide the batter among the 6 cupcake holes - they should each be around 2/3 full. Make sure you leave room for them to rise in the oven. Do your best to scrape the bowl clean - you don't want any of that deliciousness to go to waste!

Bake the Cakes

Put the cupcakes into the oven for 20 minutes, or until they're golden brown. Top tip: you'll know that they're ready when a skewer inserted comes out clean. Once the muffins are out, move them to your wire rack to cool.

Make the Icing

Add the yoghurt, peanut butter, and honey to your medium bowl, and beat until it's smooth and thick.

Decorate the Cakes

Pour the icing into the piping bag or sandwich bag, and swirl it on top of each cupcake. Alternately, spread it on with your knife. Pro tip: make sure your cakes are cool at this point, or else your icing will melt!
