Texas Style Stacked Enchiladas

Serves 2-3

  • 1lb of Hamburger meat
  • 1 can (10oz) of Old El Paso Red Enchilada Sauce
  • 2 Eggs (3 eggs will be needed if 3 people will be enjoying the meal)
  • 1 package of Corn tortillas
  • 2 cups of Cheese
  • Dash of Salt and pepper
  • Preferred cooking Oil
  • 1 onion chopped (optional)
  • Sour cream (optional)

Warm Sauce

Begin warming sauce on low heat. Stir often to keep sauce from developing a film on top.

Fry Tortillas

I recommend using 2 Tbs of canola oil in a small sauce pan with high heat. While the oil is heating up, prep the hamburger meat pan.

Place the meat in a medium size sauce pan on medium-high heat and break the meat up.

At this point the oil should be warm enough to begin frying the tortillas. Have a plate or bowl with a paper towel ready! Place 1 tortilla at a time in the frying pan. It should take 15-20 seconds on each side or until each side is golden brown.

Once fried, place the tortillas on your plate or bowl.

Cook Hamburger Meat

Your hamburger meat should be cooking nicely at this point. Right now you should only be warming the sauce and finishing the browning of the meat.

Side Note: Season the meat with salt and pepper or Old El Paso Taco Meat Seasoning.

Begin Stacking!

Once all of the ingredients are finished cooking, begin stacking. You will want to follow the steps below.

1- place fried tortilla on plate

2- cover tortilla will hamburger meat (remember you will need to do this 3 more times, leave enough meat for everyone!)

3- Sprinkle cheese and onions on at this point

4- Pour a ladle of sauce on top of the stack

5- repeat the steps above 1 more time

6- place the stack on a cookie sheet and continue making the next person's stack

The recipe will yield 1-2 servings, if you buy extra hamburger meat you will be able to make 3 servings.

Oven Time!

Place your stacks in the oven and begin frying 1 egg per person. Once you are finished frying, remove the stacks from the oven.

Complete the Masterpiece

Once everything is out of the oven, place one egg on each persons stack.

Top it off with cheese, sour cream, or whatever you want!

EAT!

Side Note: you can stack multiple times per person to have a super stacked enchilada! just double the ingredients for every 2 people.
