Eggcellent Eggs!
I don't like eggs. I know there are countless different ways of preparing them... and they are essential ingredients in the kitchen. But egg-based recipes never satisfied me. Until I found this one. As flavourful as goat cheese can be, in this case it combines perfectly with the scrambled eggs, and brings a smooth taste and texture. Although easy, and fast, the result of this recipe is completely different from usual scrambled eggs, and very satisfying.

Supplies
Tools:
- Pan
- Bowl
- Spatula
- Fork
- Knife
Ingredients (for 1 person):
- 2 eggs
- Half a stick of goat cheese
- Chives
- 1 tablespoon of butter
- Bread
Prepare the Eggs
Break the eggs and scramble them in a bowl.
Prepare the Chives and Cheese
Cut the chives in thin pieces. Take your goat cheese out of the package and pre-cut it into slices.
Warm Up
Warm up your pan on the stove, medium fire. Melt the butter in the pan.
Add Your Eggs
Once your pan is warm, add your eggs in the pan.
From this moment onwards, keep stirring dynamically... and don't forget the corners!
If you notice it is going too fast, remove your pan from the fire for a few seconds and take the time to also stirr what is in the corners.
After 3 minutes, remove your pan from the fire and add the goat cheese. Scramble it over the pan. Once this is done, put it back on the fire.
While you stir, try to melt the goat cheese, mash the biggest pieces at the bottom of the pan if needed. The goal is to obtain a smooth texture.
Finishing Touch
Once you obtain a texture similar as on the images above, remove your pan from the fire and turn it off.
Add the finely cut chives and mix them with the rest.
Present It Nicely
Dispose your egg preparation on the bread. Add some uncut chives for a green touch.
