The Cajun Devils Eggs
Gather Ingredients:
12 eggs
3 tbsp. mayonnaise
1/2 tsp. mustard
1 tbsp. dill pickled relish
1/2 tsp. salt
1/2 tsp. pepper
Slap Your Mama seasoning or any other Cajun preferred seasoning.
Prepare Eggs
Boil eggs for twenty minutes or until hard-boiled.
Peel eggs and cut in half long-wise.
Gently remove egg yolk and place in a mixing bowl.
Place egg whites on a plate.
Prepare Filling
Place all ingredients, except Cajun seasoning, into bowl with egg yolks. Whip ingredients until smooth and stiff. If the mix is too runny, add another egg yolk or two, if too stiff add a little more mayonnaise or a dash of milk.
Fill Eggs
Place a spoonful in each egg white that is on the plate. If you prefer over stuffed eggs, leave off filling one or two of the halves.
Add Cajun Seasoning
Place decoratively on a plate. Sprinkle Cajun seasoning over eggs You can add a sprig of parsley for contrast and presentation. Enjoy on holidays and feast days with friends and family!!!
