Three Fold Steamed Pudding - Vanilla, Strawberry and Chocolate
You might be wondering why I called this a three fold pudding. It's because when you have three flavors it also means you can enjoy it three times as much. Plus this pudding uses healthy sourdough for the base. Excellent!
So let's go and check our this delightful vanilla, strawberry and chocolate steamed pudding.
Ingredients
For this recipe you will need:
- 100 grams (3.5 oz) of butter
- 100 grams (3.5 oz) of sugar
- 4 eggs
- 400 grams of Sourdough Starter
- 1/4 teaspoon of baking soda
- 2 teaspoons apple cider vinegar
- 4 slices worth of breadcrumbs (about 1 Cup)
Delicious ingredients to flavor dough:
- 18 grams chopped chocolate
- 1/2 teaspoon cocoa
- 70 grams strawberry's
- 1 teaspoon vanilla bean paste (for the vanilla flavored dough)
- 1/2 teaspoon vanilla bean paste (for the chocolate flavored dough)
Butter and Sugar
Cream together the butter and sugar then scrape down the sides of the mixer bowl.
In Go the Eggs
Add the four eggs into the mixture and mix in. Next pour in the sourdough mother starter and the baking soda. Mix this all together.
Bread Crumbs and Our First Flavor
Break up four slices of dry/toasted bread and use a food processor to grind these into bread crumbs then add to the mixture. Finally add the apple cider vinegar and mix well.
Separate this mixture into three. Into one mix in 1 teaspoon vanilla bean paste.
We have now completed our first flavor...vanilla!

Strawberry and Chocolate
Now it's time to use those delicious ingredients. Remember this recipe will NOT taste the same if you eat some of the chocolate that needs to be in the recipe.
Today I used frozen strawberry's. Defrost these, then use a fork to mash them into a puree.
Strawberry Dough
Pour 1/3 of the dough mixture into the pureed strawberry's and mix together. This is the strawberry part of the pudding.
Chocolate Dough
Pour the second 1/3 of the dough into the chocolate and mix it together with the cocoa and the vanilla paste. That's our final flavor completed.
Bringing It All Together
Pour the strawberry mixture into two ramekins 100 mm in diameter and 50 mm high. Then the plain mixture. And finally the chocolate mixture. Well done, it's looking great!
Steam the Puddings
Cover your puddings with two layers of baking paper each and tie these on with string.
To make your own steamer place a wire rack into a large pot and pour in boiling water. It doesn't matter if your pot is a different size to ours - what counts is that the water comes no further than 1/2 way up the ramekin. Don't forget to put a lid on your steaming pot.
Steamed and Ready to Eat
Steam for 1 hour then carefully remove the baking dish from the steaming pot. Cut the string and remove the baking paper.
These puddings have a great consistency and a lovely flavor.
Try serving these puddings with a dollop of yogurt or whipped cream.
