"Tie-Dye" for Skinny Cupcakes

 1/2 cup non-fat vanilla yogurt
2/3 cup skim milk
1/4 cup applesauce or 1 smashed banana
2 1/2 tablespoons canola oil
3/4 cup Splenda or other  sugar substitute
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

Preheat oven to 350 degrees.
Mix wet ingredients.
Sift in dry ingredients.
Separate Batter into 4 bowl and add about
3-4 drops of food color to each bowl and still well

Place a spoonful of each color batter and
Fill cupcake liners three quarters full.

Bake for approximately 25 minutes.
Cool completely.

2 cups powdered sugar or Sugar-Free Powdered Sugar
2 tsp vanilla extract
a teaspoon of fat-free milk
Whip it all up until it’s thick and fluffy, being careful not to add too much milk

Then separate the frosting into 4 separate bowls and add food color to each one.
Stir well and place into piping bag beginning at the 12 O'clock position, put the first tablespoon of colored frosting and
then put the next tablespoon of a different color frosting at the 3 O'clock position and continue with each color until you reach the 12 O'clock position and repeat until frosting fills piping bag. Pipe onto each cupcake and top with choice of sprinkles, or any other decoration to fit the theme of the occasion.

Place each cupcake into 6"x 6" squares of tissue in preparation for placement into the gift box.
