Tiny "cheeseburger" (vanilla, Chocolate and Cherry Cookies!)
This tutorial will show you how to make these tiny cheeseburger cookies!
Chocolate Truffle "steak"
-7 ounces dark chocolate 60% cacao or higher (200g)
-1/3 cup of unsalted butter at room temperature (80g)
-2/3 cup of powdered sugar (85g)
-4 tablespoon heavy whipping cream (60ml)
-2 egg yolks
-2 tablespoon milk
-1 teaspoon vanilla extract (optional)
Melt chocolate with milk in a large bowl. Gradually add butter and stir the chocolate mixture until smooth. Add the egg yolks one at a time, then 4 tablespoon heavy whipping cream. Stir the chocolate mixture until you have a nice, smooth consistency.
Refrigerate until firm (this will take at least two hours).
Roll out balls of the chocolate ganache and slightly flatten them in order to make the tiny steaks.
(You can sprinckle your countertop with powdered sugar if the chocolate ganache is getting too sticky.)
Cookie "burger Buns"
Simple "biscuit sablé" recipe :
-2 cup of all-purpose flour
(250g)
-1 cup of caster sugar (125g)
-1/2 cup of unsalted butter at room temperature (110g)
-1 egg
-1 egg yolk
-sesame seeds
-1 pinch salt
-1 teaspoon vanilla extract (optional)
Beat the egg & sugar together until smooth, add the unsalted butter and gradually incorporate the flour. Add 1 pinch of salt and a teaspoon of vanilla extract.
Stir the flour mixture until smooth.
Roll the cookie dough into a ball and place in the refrigerator for about 30 minutes.
Roll out the cookie dough (about ½ inch thick). Use a round cookie cutter or an upside-down drinking glass to cut out the cookies. As shown in the picture, gently flatten the bottom part of the burger bun.
Brush the egg yolk onto the unbaked cookies and sprinkle with sesame seeds.
Bake for 20 minutes in a 365 degrees F oven (180 degrees C).
Set aside to cool (10 minutes).
Fondant "cheese and Lettuce"
Roll out yellow fondant and cut several squares to make the "cheese".
Roll out a thin sheet of green fondant and cut several strips, you can use a ball tool (or the round end of a knife as shown in the picture) to create a ruffled texture.
Glacé Cherries "tomatoes"
Cut thin cherry slices and arrange them on top of the "lettuce".
