Toasted Pumpkin Seeds

This instructable will show you step-by-step how to make toasted pumpkin seeds three ways; lemon-pepper, hot & salty and sweetly spicy.

You'll Need:

3 carving pumpkins
2 pie pumpkins

1 Large Knife
1 Large Spoon
1 Large Bowl
3 Small Bowls
3 Baking Trays
1 Strainer / Sieve

Lemon-Pepper:
1/2 tbsp Olive Oil
1/2 tsp Turmeric
1/2 tsp Basil
1/2 tsp Sea Salt
3/4 tsp Cracked Black Pepper
1 tsp Lemon Juice

Hot & Salty:
1 tbsp Olive Oil
1/2 tsp Cumin
1/2 tsp Paprika
1 tsp Sea Salt
1/2 tsp Cayenne Pepper

Sweetly Spicy:
1 tbsp Butter
1/2 tbsp Granulated White Sugar
1/2 tsp Pumpkin Pie Spice

Carve & Separate

Carve out your pumpkins to make Halloween Jack-O-Lanterns and save the insides. 
Next separate the pulpy pumpkin flesh from the seeds.

Set the innards from your 2 pie pumpkins aside to make pureed filling for pie.

Rinse & Divide

With your seeds sorted into a sieve, rinse and pick away all the stringy pumpkin bits which remain before dividing your seeds into smaller batches.

Season

Each batch I roasted was just under 1 & 1/2 cups of seeds.

For this instructable I used the seeds from 3 medium carving pumpkins and the seeds from 2 pie pumpkins. The seeds from the pie pumpkins were done with lemon pepper and the the seeds from the 3 larger pumpkins I split half sweet and half salty.

Slather your seeds in seasoning and spread out as evenly and flatly as possible on baking sheets.

Lemon-Pepper:
1/2 tbsp Olive Oil
1/2 tsp Turmeric
1/2 tsp Basil
1/2 tsp Sea Salt
3/4 tsp Cracked Black Pepper
1 tsp Lemon Juice

Hot & Salty:
1 tbsp Olive Oil
1/2 tsp Cumin
1/2 tsp Paprika
1 tsp Sea Salt
1/2 tsp Cayenne Pepper

Sweetly Spicy:
1 tbsp Butter
1/2 tbsp Granulated White Sugar
1/2 tsp Pumpkin Pie Spice

Roasty Toasted

Toast your seeds in an oven pre-heated to 350℉ for fifteen minutes, turning or stirring every five minutes.

Seasonal Snack

Let the seeds cool for fifteen minutes before serving as a seasonal snack.
