Tortellini Chicken Pesto on a Stick
Recently I went to a potluck with the theme “On a Skewer.”
It was a busy week, so I needed something quick to put together that would be tasty, fun and different.
These 3 ingredient chicken pesto tortellini was the perfect choice and you can put them together in under 30-minutes.
Great to bring to a party or to serve along a big hearty salad to add some fun to a weekday family dinner!
They are so easy to put together! Enjoy!
Supplies
Ingredients:
2 cups fresh tortellini (from the cold section)
2T store bought pesto
12 oz packaged of precooked grilled chicken
Tools:
Cutting board
Kitchen knife with a straight blade
10 long skewers
Medium bowl
Saucepan
Colander
Make the Tortellini
In a saucepan, bring 4 cups of water and 1tsp salt to a boil.
Add the tortellini & cook for 2-min (or follow the directions on the package)
Drain into colander & rinse with cold water for 10-seconds
Add tortellini and pesto into your mixing bowl and stir to cover all tortellini with the pesto
Chop the Chicken
Cut the pre-cooked grilled chicken into large chunks large enough to fit on the skewers
Build Your Skewers
(Makes about 10 skewers)
Skewer 1 piece of chicken onto the pointy end, and leave 2-4 inches at the bottom of skewer as a handle
Add 2 pesto coated tortellini, then 1 piece of chicken, 2 more tortellini and top with 1 piece of chicken.
To best skewer the tortellini, place the tortellini on a cutting board with the “flap” facing up. Skewer from the bottom, catching the flap and skewer straight through the body of the tortellini (see pic)
This is a chance to get creative! You can build your skewers however you want! You can make them all the same or make each one unique.
Place on Serving Dish
That’s it!! You’re done! Place beautifully on a serving dish and serve to your friends and family.
You can also add a dish of extra pesto for dipping
