Vegan Gin and Tonic Cupcakes

GNTBlog.jpg

This week, I took out all the eggs and dairy, and replaced it with GIN! What a wonderful plan. Inspiration came from a Vegan Cupcake book borrowed from a friend (hey Alison, I promise to give it back...) and I am now obsessed with their delicious boozy spongey flavour and texture. The video is embedded here for you to watch, with a full recipe list on my website as well.
