Ice Cream Without an Ice Cream Maker

Easy Homemade Ice Cream

In this instructable, my daughter and I show you how to make some ice cream without needing to use an ice cream maker, or without having to agitate the mixture at all during the freezing process.

There were many times I wanted to make ice cream but didn't have a maker, and I didn't want to shake baggies. Then I found this recipe and I think I like it better than regular ice cream.

It creates a creamy texture that is amazing!

Ingredients!

Today we made Chocolate Chip Mint Ice Cream so here are the ingredients for that. You can make any kind of ice cream though by simply making the ice cream base (consists of heavy cream, and condensed milk) and then add whatever flavorings you want.

Ice Cream Base:

1 Pint Heavy Cream

2 cans Condensed Milk

Recipe from this video:

1 Pint Heavy Cream

2 Cans Condensed Milk (8oz each)

1/2 Bag of Mini Chocolate Chips

6 Drops of Peppermint Essential Oil

Add Heavy Cream

Add the Heavy Cream into the mixer.

You can also use a whisk and do this by hand if you don't have a mixer, but it's much easier with the whisk attachment of a stand mixer.

Beat the Heavy Cream

Beat the Heavy Cream on high until it becomes whipped cream.

You should be able to lift up the whisk and see stiff peaks in the cream.

*Note: You don't want to over mix this though, or your cream will move passed the whipped cream stage and turn into butter.

Add Condensed Milk.

Once you have made the whipped cream, you will slowly add the condensed milk into the mixer.

You want to make sure that you are doing this slowly and not over mixing so that you don't lose the air that you created when beating the heavy cream.

Add Flavors/Extras

At this point your ice cream base is done, so now you can add in whatever flavor you would like.

We were making Chocolate Chip mint so we added the chocolate chips, and the mint essential oils.

Again you want to make sure that you are not over mixing and losing the volume you created previously, but at the same time you want to get the ingredients mixed in. You can also choose to fold in the ingredients instead of mixing them in just to help keep the volume. - It's not easy to lose the volume but it is possible if you mix too much.

Freeze

Now simply transfer the ice cream to a sealable container and freeze it for a few hours.

I like to freeze it overnight, but generally, it will be ready in about 4 to 6 hours in the freezer if you want a soft-serve style ice cream.
