WATERMELON & CHERVIL CREPES
WATERMELON & CHERVIL CREPES FILLED WITH A WATERMELON CHERVIL CHEESE FILLING
Crepes are fast and fun. There are many variations you can use when making the crepe batter and the fillings. I took a basic crepe recipe and replaced watermelon for the usual liquid. It gave the crepes a deeper color and using chervil gave it little flecks of green.
My recipe yields about 2 dozen crepes.
INGREDIENTS for Crepes
Watermelon - 1 1/2 cups- pureed
2 dozen small cut in star shapes -to be used for garnish
1 1/2 cups all-purpose flour
3 eggs
2 tablespoons vegetable oil
1/8 teaspoon salt
Chervil - fresh- 1/4 cup
Powered sugar to sprinkle on top - optional
Mint for garnish
Directions for CREPE MIX
BLENDER METHOD:
Put all ingredients into BLENDER, cover and blend on HI until smooth. Place in refrigerator while you prepare the ingredients for crepe filling and to allow air bubbles to be released from mix. Batter can be made in advance and stored in refrigerator for up to 2 days. When ready to use mix, stir again because the chervil will settle to bottom.
I used a crepe maker but you can use a small skillet. If using a crepe maker just follow product instructions. Mine heats up within 3 minutes and each crepe cooks fast because they a just like thin pancakes. I put my mix in a shallow pie plate.
If using a skillet, heat the skillet and coat skillet with a small amount of butter or non-stick spray. Use about 2 tablespoons of batter per crepe, tilt skillet to coat evenly in very thin layer. Cook over medium heat until bottom is brown.
Yields about 2 dozen crepes.

2 cups WATERMELON cut in small pieces
2 cups Ricotta cheese
2 cups Cottage cheese
8 - pieces of ready to eat-fully cooked bacon - crumbled
1/4 cup - CHERVIL - finely chopped
1/4 teaspoon salt
DIRECTIONS for CREPE FILLING
In a large bowl combine all ingredients (except the watermelon) listed and mix gently. Place a crepe on a plate and place a small amount of watermelon along the center. Next place a few spoonfuls of the chervil cheese mix on top of watermelon. Fold over each each side of filling. Sprinkle with powered sugar if desired. You can place a few star shaped cut pieces of watermelon on top and garnish with mint.
