Warm Coffee Cake

I am always stuck on what to cook for breakfast for out-of-town guests during the holidays. I would rather drink coffee and eat cold cereal then put out any real effort first thing in the morning- I am NOT a morning person. This quick and delicious Apple Cinnamon Coffee Cake is the perfect solution when my regular fare won't cut it.

Ingredients:
2 7-ounce boxes Apple Cinnamon muffin mix(such as Jiffy), prepared as directed
1 Granny Smith apple
2 tablespoons sugar
1/2 teaspoon cinnamon
1 cup prepared vanilla frosting
2 teaspoons cinnamon

Preheat Oven and Grease a Cake Pan

Preheat oven to 350 degrees. Spray a 8-inch cake pan with non-stick cooking spray.

Prepare Batter

Prepare muffin batter as directed on the box. Jiffy brand Apple Cinnamon muffin mix calls for adding 2 eggs and 1/2 c milk to the dry mix.

Peel and Slice Apple

Peel and thinly slice the apple. Place in the bottom of the prepared cake pan in an even layer.

Combine and Sprinkle

Combine 2 tablespoons of sugar and 1/2 teaspoon of cinnamon and sprinkle on top of apple slices in cake pan.

Pour Batter

Pour batter into cake pan on top of apple slices.

Bake Your Coffee Cake

Bake at 350 degrees for 28-32 minutes, or until a toothpick inserted in the center comes out clean.

Let Cool and Flip

Let cake cool in pan for at least 10 minutes, and then flip onto serving platter.

Stir and Drizzle

Stir together cinnamon and frosting. You may need to add a few tablespoons of milk to thin the frosting. Drizzle over coffee cake and serve immediatly. Enjoy!!!!
