Watermelon Jelly
_ I love water melon and tried this water melon delight without any agar agar or gelatin.
_ kids will surely love this jelly and it just melts in our mouth. Here iam using a simple available ingredient cornflour as thickener.

Supplies
Ingredients:
_ Sliced deseeded water melon
_ 1/4 cup of corn flour
_ 1/4 cup of water
_ Half cup of sugar
_ Red food colour
_ Dessicated coconut
_ plastic cups

Slice Water Melon
_ Take watermelon and remove seeds. Slice them in to pieces.
Blend in to Juice
_ Transfer sliced water melon pieces in to blender and blend to juice without adding any water
_ We need to make 2 cups of juice.

Add Sugar
_ Add about half cup of sugar and give a mix.
Boil the Watermelon Juice
_ Transfer the watermelon juice in to a vessel and heat it.
_ Add red food color and give a mix.

Make Corn Flour Paste
_ Take 1/4 cup corn flour and add 1/4 cup water to it and make a paste.
Add Corn Flour Paste
_ Add prepared corn flour paste to boiled water melon juice and keep mixing.
_ I have taken almost 1/4 cup corn flour and added in 1/4 cup water. After adding corn flour if mixture is little liquidy add little more and make consistency thick.
_ cook till mixture starts thickening.

Cool and Transfer to Plastic Cups
_ Once mixture starts thickening. Switch off the stove and cool for 5 minutes.
_ Transfer in to plastic cups and refrigerate for 2 hours.

Demould Them
_ once it is set remove cups from refrigerator and demould it. Slowly invert the cup and tap it. You will get a jelly block.
Slice Them
_ Slice water melon jelly in to small circles
Coat With Dessicated Coconut
_ Coat the slices with the dessicated coconut in both sides.
_ Dessicated coconut gives very nice taste and flavour to the watermelon delight.

Garnish With Mint Leaf
_ Finally garnish with mint leaf and serve the delight.
