Watermelon Stir Fry With Chervil Cabbage Dumplings
I love any form of Asian cooking and most of my recipes are influenced quite a bit from that portion of the world. This is no exception. I present : Watermelon stir fry! You may think I'm crazy and you're right. But I'm also a crazy good cook so prepare your taste senses to be wowed.
Getting Ready..
Before starting any recipe, it's best to have everything ready for it. For this recipe we will need:
- 1/2 medium size red onion
- 2 cloves garlic
- 2 cups snap peas, trimmed, large ones cut in half on a bias
- 2 cups oyster mushrooms, large ones cut in half
- 2 cups watermelon, cut into 1 inch pieces roughly
- 1 tbsp rice vinegar
- 1 tbsp soya sauce
- 1/2 teaspoon chili sauce (reduce this to 1/4 tsp if you're not a spicy fan)
- 1/2 cup cashew pieces
- 1 tbsp vegetable oil
For dumplings:
- 4 cups Napa cabbage, finely shredded
- 1/2 cup finely diced chervil
- 1 tbsp minced ginger root
- 1 tbsp sesame oil, divided
- 1/2 tsp salt
- 1 package square dumpling wrappers
Equipment:
- Pot, with a tight fitting lid
- Steamer basket
- Large frying pan
- Measuring spoons and cups
- Cutting board
- Knife
The Dumplings
Put about an inch of water in a pot with a fitted lid and bring to a boil. Reduce heat to a simmer and put the steamer basket in the pot. Steam the cabbage, ginger and chervil in the steamer basket for about 4 minutes or until tender. Remove into a bowl and add the salt and 1 tsp sesame oil in, mixing well. Rinse the steamer and set up again.
Set up some dumpling wrappers, with a little dish of water on the side. Spoon around 1 tbsp of filling into the middle of the wrapper. Fold in half bringing one corner over to it's kitty corner. dip your fingers in water and rub some on the wrapper, pressing firmly to seal. Bring the other 2 corners together, using water to seal and then the final corner up. Continue until all filling is used up. Will make about 15 dumplings. Set aside until ready to cook.
Place in Steamer. When steamer is full, place lid on and steam for 8-10 minutes. Remove from steamer and place on top of stir fry or on a side plate until stir fry is ready. Repeat until they are all cooked.
Making That Stir-Fry
While dumplings are cooking, heat vegetable oil over medium high heat until hot. Add onions and garlic. Cook for about 1 minute, stirring or tossing frequently. Add the snap peas and oyster mushrooms. Cook for about 2-3 minutes, tossing or stirring frequently. Add the watermelon, soya sauce, rice vinegar and chili sauce. Stir to combine fully. Cook for about another 2-3 minutes or until everything is happily cooked.
The Finishing Touches
Portion stir fry out into 2 bowls and evenly distribute the cashew pieces over the stir fry. Remove dumplings from the steamer or side plate and place on top of stir fry. Leftover dumplings can be eaten then, or saved for a midnight snack. Drizzle remaining sesame oil over the dumplings. Enjoy!
