White Chocolate Key Lime Pi
Ingredients:
Crust:
2 cups cookie crumbs (you can graham cracker, snickerdoodles, sugar cookies)
4 tablespoons butter, room temperature

14- ounce can sweetened condensed milk
4 egg yolks
1/2 cup key lime juice (fresh or bottled)
2 tablespoons lemon or lime zest

1/8 cup sugar
2 cups white chocolate chips

Make Your Crust
To make your cookie crust, put approximately 12-14 graham crackers (or a mixture of graham crackers and others.) into a food processor and process until fine crumbs. Add softened butter until mixture is pliable. Push into a pie dish to form crust, and then bake for 15 minutes at 350F degrees. Remove to cool as you make pie filling.
Preparing the Filling
In a mixing bowl, combine your egg yolks, condensed sweetened milk, lime juice and zest thoroughly until well-mixed. (The zest will add a crisp tang to the curd, as well as give a nice presentation when the "pi" is cut.)
Do not over beat. Pour into cooled cookie crust, and place in a 375F degree oven for 15 minutes. Remove promptly. You do not want the curd to darken. It will set further as it cools.

Making the White Chocolate Decorations
As the "pi" cools, start your white chocolate decorations, which you will use to write out Pi in number around the edges.
Pour your white chocolate chips into the top portion of a double boiler. We use a metal bowl and then have it sit in a pot over boiling water without touching the water. Stir the chocolate constantly: you want to melt the chocolate slowly without having it burn or separate.
Once it has liquified completely, remove immediately from the heat, and with a small teaspoon, pour the chocolate onto wax paper or storable bags. (We use ziploc bags.) The chocolate should set fairly quickly, but to help, place the chocolate on a cookie sheet or plate and into the freezer for about 20 minutes.
Remove, and write on the circles the number Pi to as many digits as you can fit around the crust. Make sure you save one for your actual "pi" symbol.

Putting Your Final Pi Together
Just before serving, whip cream in a stand mixer on high and add sugar slowly. You can adjust the sugar to your taste. Pour whipped cream into a baggie, and cut the tip off, then squeeze small rosettes or drops around the edges of the crust.
Place white chocolate numbers around the edges into the cream to form Pi, and place you symbol in the center.
Then slice, and enjoy!
