85g Ground Almonds

150g Icing sugar

90g Egg White (Room Temperature)

55g Caster Sugar

To make the macarons blend the ground almonds and icing sugar in a food processor for 1-2minutes. Add the egg whites to a stand mixer and whisk on a medium to high speed for 4 minutes until frothy. At this point, slowly add in the sugar and whisk for another 4 minutes until stiff peaks form. Sieve in the ground almond and icing sugar mixture and fold into the egg whites with a spatula. MAKE SURE NOT TO OVER MIX, 40-50 stirs should be enough, the consistency should be like cake batter.

250g / 2 Cups White Chocolate

235ml Double Cream

1 Vanilla Pod

Heat up the double cream and vanilla beans in a saucepan. Once the mixture begins to bubble, pour the mixture over the white chocolate and leave to sit for 5 minutes before siting.

Pipe & Bake

Pipe the mixture onto a cookie sheet lined with parchment paper. Tap the tray against a work surface to get rid of any air bubbles and leave to sit for one hour until a crust has formed around the macarons. Bake for 10-12 minutes at 160 degrees celsius turning the tray around at the 5 minute point so they bake evenly. Leave to cool for 2 minutes before removing from the paper.

Red & Black Icing

Create the Sharingan eyes using red and black icing. Alternatively you could use food colouring pens. Pipe on the ganache and sandwich together.
