Whole Wheat Waffles With Tangy Plum Sauce
Growing up, I used to wake up to the tantalizing smell of delicious pancakes smothered in a delightfully tangy plum sauce that my mother use to make from fresh plums straight from her garden. When I grew up, I became a converted vegan and decided that I wanted to enjoy this recipe vegan-style. Luckily, there were very few changes I had to make to make this possible. This is a very easy recipe that will definitely get your day off to the right start!
The Ingredients
1. Waffle Batter
2 c whole wheat flour
1 tsp baking powder
1 tsp salt
3 tbs sugar ( use any sweetener you like :)
1 tsp cinnamon
1 1/2 c soy milk
3 tbs canola oil
2. Plum Sauce
3 plums
1 tbs agave nectar
1 tbs lemon

How to Make the Waffle Batter
1. Mix the dry ingredients
2. Mix the wet ingredients in a separate bowl.
3. Add the wet ingredients to the dry ingredients.

How to Make the Plum Sauce
1. Slice up the plums.
2. One by one, puree them in a blender.
3. Add the lemon.

The Finale
Pour your plum sauce into a small pan/pot and let it start to heat up on a medium-low setting. While your sauce is heating up, grease your waffle maker and get your waffles cooking. They should be done about the same time. BON APPETITE!
