Whoopie Pi Pies With Whipped Cream Cheese Filling
Hello, this instructable will show you how to make delicious Whoopie pies with a whipped cream cheese frosting. Mine are based on Pi for the upcoming Pi day, however they could be cut out into any shape or not cut at all. I hope you enjoy!

What you need:

Microwave safe bowl
Whisk
Spatula
Stand mixer or hand mixer (not completely necessary, but very very helpful)
Cookie sheets
Non-stick spray
Oven preheated to 375 degrees
For the cookies:
6oz semi-sweet chocolate (chips are fine)
1/2 cup / 1 stick butter
1 cup sugar
3 eggs
1 tsp vanilla
1 cup flour
1/4 cup cocoa powder
1/2 tsp baking powder
For the filling:
4 oz cream cheese
splash of vanilla
1/2 cup powdered sugar
1/2 pint heavy whipping cream

Melt Chocolate and Butter
Place the semi-sweet chocolate and stick of butter in the microwave safe bowl.
Microwave the chocolate and butter, stirring every 30 seconds, until it is fully melted.
Be careful the bowl will be very hot please use hot pads!

Add Sugar, Eggs and Vanilla
Add the sugar, eggs and vanilla and whisk until it is all incorporated and the mixture is smooth.
Add Dry Ingredients
Add the flour, cocoa and baking powder into the bowl.
Use the spatula to gently mix the dry ingredients into the wet. Stir just until the ingredients come together, and be careful not to over mix.

Prepare Cookie Sheet and Scoop Batter
Prepare your cookie sheet, I suggest a silicon mat or parchment paper with a non-stick spray.
Then scoop your batter onto the tray, I used a disher scoop but a spoon would also work. You want your scoops to be approximately the same size and make sure to give them room because they will spread.

Cook the Cookies
Once the tray is ready you can bake them for 10 minutes, or until they spring back when you gently poke them.
Whipped Cream Cheese Frosting
Whip the cream cheese with the powdered sugar until it is a smooth mixture, you can do this by hand but its a lot easier with a mixer.
Whip the Cream
In a separate bowl add the heavy cream and vanilla and whip it until it forms soft peaks.

Combine Cream Cheese and Whipped Cream
Gently fold the cream cheese into the whipped cream until combined
Make the Whoopie Pies
Turn half of your cookies upside down and scoop a dollop of the filling onto each one.
The other half of the cookies are the tops of the whoopie pies, if you would like to cut shapes out you should use a cookie cutter and gently push down on the cookie and pop out the shape.
When your tops are ready place them on top of the bottom cookies pushing down slightly so the filling squishes out to the sides.
