Wild Garlic "Pull-apart" Bread
From late February (in areas) right through to May there's a superb wild garlic herb available in the UK that you can forage for free and should mean you'll not need to buy the bulb variety all spring
Here we have a quick tutorial on finding the plant, making it into a garlic butter and finally a fantastic pull-apart garlic bread. Great to get the kids involved, thinking about nature and loving good food with this superb snack.

Preparing Wild Garlic
Firstly, pick only the leaves. The younger/smaller the leaves the better and ideally ones away from any main paths where animals may have roamed. The plant may have flowered already (which makes it easier to spot) but this is still fine to eat in this state.
Once you have the leaves wash them throughly under a running tap and pat dry, leave to dry on some paper towel.
Once the leaves are dry, roughly chop with a knife and set aside.
Making the "wild" Garlic Butter
- Garlic Leaves
- Unsalted Butter
- Lemon juice
- Sea Salt
Making Your "pull-apart" Garlic Bread
Take your loaf of bread and cut diagonally across the top about 3/4 of the way into the loaf. Do this all across the loaf leaving an inch gap with each cut. Turn and repeat this in the opposite direction so you have a grid like patterrn.
Take the Garlic butter and smear it in the gaps of the bread made from the cuts, take as much as you require and make sure all the gaps have coverage of butter. Add you favourite cheese to the top (we used a parmesan) to create a tasty crust.
Cover with foil and heat in the oven for 15mins at 180C/350F then remove the foil and bake for another 5mins.
Take the garlic bread out of the oven, place on a plate or chopping board and serve immediately. Use hands and literally pull apart all the squares of deliciousness!
