Zeppole
Zepoole's are a traditional Italian pastry. They taste great!
The Custard
For the custard first take 3 egg yolks and 1/3 cup of sugar and simmer in a sauce pan. Once the mixture gets real thin add the 1/4 cup flour and stir. Add a 1/4 cup milk and then stir constantly till thickens. In another sauce pan add 3/4 cup milk along with seeds from 1/2 vanilla pod and 1/2 lemon zest. Bring to a boil and let cool for 5 min. Now add the milk mixture to the other mixture a little at a time. Still till real thick simmering (10 min) now put in a bowl and set in fridge till cool.
Dough
For the dough first place 1 cup of water and 5 T of bitten in a sauce pan and put on medium heat. Once the water begins to simmer and the butter Is melted take off heat and add 1 1/2 cup of flour. Stir till a ball is formed. Return to heat and let sit 5 min to dry the dough. Now let the dough cool. Once cool take the zest of 1 lemon and a pinch of salt and stir in. Beat in three eggs one at a time. Now put mixture in a pastry bag with a star tip pipe circles on 3"X3" parchment paper sheets.
Frying
Now heat your oil, place the piped dough, parchment paper and all into your frypan and let fry till golden brown then flip. Remove when both sides are a equal color. Let cool. Put your custard in another piping bag with a star tip. Pipe the custard onto if the fried dough. Add a cherry on top and sift some powder sugar on top. Enjoy!
