Zesty Breakfast Tacos
Simple, healthy, fast- What more could you ask for in a breakfast?!
If you have lots on the go and need a protein packed breakfast with lots of flavour and that is easy to whip up- here is an idea of eggs done a little differently.
Ingredients
For this, you can add whatever ingredients to your egg scramble that you want. I have peppers, tomato and onions but you can also add beans, corn, other veggies, or meat that you want. Cilantro would have been a nice topping but I didn't have any.
The amounts can easily change depending on how many you are serving. I made here two breakfast tacos.
Ingredients:
- 2 eggs
- red pepper
- red onion
- tomato
- cheddar cheese
- cumin, chili powder (about 1/4 teaspoon of each)
- lime
- corn tortilla wraps
- sour cream
- salsa
- butter to grease frying pan
- salt and pepper to taste
Chop and Mix
Cut up the vegetables into small diced pieces.
Grate the cheese.
Scramble the eggs and add a bit of salt and pepper to the mix.
Mix everything together.
Cook Up the Scramble
Toss the scramble into a greased frying at medium heat.
While this is cooking, heat up the tortillas for 20 seconds in the microwave.
Scramble the eggs making sure to not let them stick to the bottom of the pan. They are done when they are not runny anymore and the cheese is melted. Remove them from the frying pan and put into the warm tortillas on a plate.
Zesty Sour Cream
Mix together about 2 tablespoons of sour cream with a wedge of lime juice, 1/8 of a teaspoon of cumin and chili powder. If you would like this mixture to be more of a drizzle, add a tablespoon of milk. If you like it thick, leave as is.
When the egg taco is ready, add a dollop (or drizzle) of sour cream mixture and some salsa. Top with cilantro if you have it.
