Zucchini Parmesan Chips With Feta Sauce (gluten Free)
Baked zucchini chips,perfect for picky eater of any age, with creamy,slightly briny feta sauce!
INGREDIENTS:
- 2 medium zucchinis
- 1 cup gluten free breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 zucchinis, thinly sliced to 1/4-inch thick rounds
- 1/2 cup gluten free all-purpose flour
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 large eggs, beaten
For the feta sauce:
- 1 cup sour cream
- 1/2 cup feta cheese
- 1 spring onion
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1 tbsp olive oil
DIRECTIONS:
- Preheat oven at 425 F. Line a sheet pan with aluminum foil and set aside.
- In a large bowl, combine breadcrumbs,paprika,salt,pepper and Parmesan; set aside.
- Working in batches, dredge zucchini rounds in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
- Add zucchini rounds to the sheet pan , and bake until evenly golden and crispy, about 15-20 minutes.
- In the meanwhile,prepare feta sauce: Simply,combine all ingredients in a blender and pulse until thoroughly blended and become sauce.Remove zucchinis from the oven and serve immediately.
