Mango Salsa Recipe

Mango salsa is something I don't make very often, but it's a lovely change from salsa or guacamole. This is a nice base recipe for it - once you've made it you can customize it very easy.

Cucumber, jicama and red pepper also add great flavor to this mango salsa recipe if you're craving more fruits and veggies!

This salsa is amazing with grilled meat of any kind or blackened chicken, but normally I just eat a whole bowl by myself with some chips. :D

Ingredients

IMG_5923.JPG
  • 2 ripe mangos
  • 1/4 - 1/2 red onion
  • 1-2 jalapeno or serrano peppers
  • fresh lemon or lime juice
  • salt
  • fresh cilantro to taste
  • cayenne pepper to taste (optional but awesome)

Riper is better when it comes to mangos - too underripe and the salsa will end up very sour. Make sure they're a little soft to the touch.

I prefer lemon juice here because lime is slightly sweeter.

Dice Everything Finely

I cut up a whole jalapeno and a little less than 1/2 an onion.

For the mangos, cut off the mango cheeks and cut the mango while it's still in the skin as shown - get as close to the skin as possible with the tip of the knife! Then use a spoon to scoop out the cut mango.

If the mango is coming out still attached at the base, don't go as deep with the spoon. There will be a little mango left in the skin like in photo 3. :)

Mix It All Together

Put all the diced ingredients into a bowl.

Add a handful of chopped cilantro (no stems!) and a good pinch of salt. Then squeeze the juice of half a lemon on top.

Mix this all together. :D

Final Seasonings

If your jalapenos weren't spicy enough, I recommend adding some ground cayenne pepper. It'll make it nice and spicy and cut through the sweetness a little. :D

I added several pinches of cayenne this time! I think this salsa is best when it's nice and spicy.

Add more salt, cilantro or lemon juice as desired. If the mango is a little too sweet for you, adding more red onion will help cut it, too. Keep playing with it until it's perfect for you. :)
