Strawberries and Cream Popsicles

I love strawberries and cream anything. ANYTHING. Since I've been on a popsicle making spree, I decided to try my hand at strawberries and cream popsicles. I made the recipe up on the fly, and it worked! HOORAY!

The ice cream and whipped topping make the popsicles nice and creamy but they're still firm enough to eat on a stick. :D

Ingredients

  • 8 oz (1 cup) thinly sliced strawberries - slice then measure!
  • 1 cup vanilla ice cream
  • 1 cup milk
  • 1/2 cup whipped topping

This recipe fits perfectly into 30 oz popsicle molds. I'm using these.

I'm using Cool Whip for the whipped topping part of the recipe - feel free to use it or sub it out for cream and sugar. I just like the flavor and texture it gives to the popsicles. :D

Mix and Pour

You'll want to combine all the ingredients in a large measuring cup or bowl and whisk them together until they're nicely combined. Adding the strawberries now will bruise them a bit and get them to release some of their juice. :)

Once everything's combined, pour the mix into the molds, dividing it evenly. The strawberries will hang out on the bottom of the measuring cup for the most part, so spoon them into the molds once the liquid's been added.

Use the spoon to make sure the strawberries are down in the molds. :)

Freeze and Eat!

Freeze for 3-4 hours or until set. These are pretty soft popsicles, so I suggest eating them immediately (which is what happened at the office!) or storing them in the mold. :D
