Purple "FIG-A-LICIOUS" Koolicles

Ingredients

2 - 15 oz cans or jars of your favorite whole FIGS in light syrup 1- 4 oz box of dried FIGS 10 - cloves of garlic 1 - 32 oz bottle of white vinegar 1- 16 oz bottled water 4 - .14 oz packets of unsweetened grape drink mix 1 cup of sugar 1/4 cup kosher salt 1 tsp red pepper flakes 1.5 oz pickling spice

The Pickling Liquid 1

In a medium pot add water and vinegar

Add pickling spice, red pepper flakes, salt , sugar and garlic to pot. Bring to a boil and shut off flame. Make sure sugar and salt are dissolved. Let cool.

Finishing the Brine

After liquid cools down add the dried figs and grape drink mix and let sit while you prepare the figs.

Preparing the Figs

In a colander drain the figs discarding any syrup. Then cut the figs in half lengthwise and place in a bowl.

Final Process

Pour the pickling brine over the cut figs in the bowl. Let sit for 15 minutes. The with a pair of tongs fill a glass jar (either a mason jar of the jar the figs came in) with the figs and brine. Close kid and refrigerate for about 2 days to get FULL PURPLE ABSORBTION. Decorate jars and give as gifts. These Fig Koolicles are great on salads, sandwiches, crackers or chopped up as a relish.
